Sour cream butternut cake

Ingredients

Batter

  • ½ cup soft butter or fat
  • 1 cup sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 tsp. almond extract
  • 2 cups flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda

Filling

  • ¾ cup butternuts
  • 1 tsp. cinnamon
  • 2 tbsp. brown sugar

Topping

  • A few maple butternuts

Preparation

  1. Preheat oven to 325°F.
  2. Mix batter ingredients.
  3. Spread half of batter in ungreased round 8 × 3-inch (20 cm × 7 cm) pan.
  4. Pour in half of the filling.
  5. Add remaining batter followed by the rest of the filling.
  6. Bake at 325°F for 1 hour.
  7. Just before serving, top with maple butternuts.
